Panna Cotta with Basil Microgreens and Fresh Strawberries

Fast and delicious dessert that is very simple and made in less than 15min. This dessert will
serve you when you are in a hurry or your guests are already coming in.


PANNA COTTA

Panna cotta is an Italian dessert and traditionally made from milk, cream, sugar and gelatin with addition of your own preferred flavors. Basically it can be served with just about any flavor you can think of.


For me, everything is going around the sweets. I just love them so much that I can barely resist any of them. But what do I also love? My time. Not just the time that I devote to our business, and time with our kids, but also my spare time. I am smiling now, because I don’t know if I can even say spare time anymore.

That’s why preparing food and sweets that don’t require a lot of time are so essential for me. And this beauty, panna cotta is one of them. I just love this super fast and easy recipe. And I bet you will also love it.

Recipe was given to me by our beloved friend Katarina, who is also having her own vegan cafeteria and preparing the tastiest vegan cakes and desserts and vegan sandwiches. And she is all in with our microgreens and edible flowers.

Plus all, it’s vegan. Instead of using gelatine, we will use agar agar. It is a jelly-like powder derived from algae. It’s tasteless and works wonderfully for this recipe! For plant based milk we will use rice, but you can go with your own preferred version, like almond or oat milk. Because rice milk is already sweeter than others, the final panna cotta will be a little bit more sweet, but not too much.

I used strawberries since now they are in season here in Slovenia, and because each time I think of strawberries, my heart just sings. I think it’s one of the most romantic fruits that mother nature made for us. At the end, you can just slice them on the panna cotta or you can mix them in the blender and pour in the glass that you have prepared.

Instead of strawberries you can use another fruit. Especially if you have it in season. Like some raspberries or any other berries.

Microgreen basil is really full of flavor, that is why the cream will be full of basil aroma, which is of course the basic point here. Combo of strawberries and basil is a perfect combination for us and hope for you too.

Vegan Panna Cotta

with Basil Microgreens and Strawberries

Ingredients

  • 2 dl of rice drink (or any other plant based milk)
  • 6g agar agar
  • 400 ml of vegan sweet cream
  • a bunch of basil microgreens
  • 1 teaspoon of lemon zest
  • a pinch of vanilla
  • fresh strawberries

Instructions

  1. Put basil in 400 ml of boiled cream and leave overnight.
  2. Strain in the morning.
  3. Stir agar agar into 1d rice drink and simmer over medium heat for 2 minutes.
  4. Slowly add cream to the prepared mixture, stirring constantly, add lemon zest and vanilla.
  5. While still warm, pour into jars and garnish richly with fresh sliced strawberries or mix strawberries separately and pour on panna cotta.
